Virginie THOMAS founded BOUSCULE TES SENS in 2021 to provide cider training for hospitality professionals. Author of two books on cider (Le Cidre with Le Journal du Sommelier and Mariage Breton with La Cité des Livres), she also leads intuitive and emotional tastings exploring cider diversity.
